THE COLLINS FAMILY: November 2008
http://parkeranthony.blogspot.com/2008_11_01_archive.html
Sunday, November 23, 2008. Here are a few recent facts and updates on the fam:. We have finally made the transition from the crib to the "big boy" bed. After more than 2 1/2 years, he finally figured out that he could climb out of the crib. I am just glad that it lasted this long! He has always been such a good sleeper, and we were very nervous that this might really mess things up! I am happy to report that it has been 2 nights now since we made the switch, and so far so good! He also deserves some kind...

THE COLLINS FAMILY: October 2008
http://parkeranthony.blogspot.com/2008_10_01_archive.html
Monday, October 20, 2008. We had a WONDERFUL fall weekend! It was a gorgeous fall day and we all had a great time. Ethan and Parker loved all of the kids activities, and burned off some major energy by running around like crazy! We picked out a little pumpkin for Parker, and a big pumpkin to carve. We also went to a Birthday party this weekend for Jack (Parker's friend from school), AND we celebrated Aunt Nina's Birthday! So- it was a jam-packed, fun-filled weekend for sure! Anthony, Stacey and Parker.

THE COLLINS FAMILY: September 2009
http://parkeranthony.blogspot.com/2009_09_01_archive.html
Wednesday, September 2, 2009. Rides, rides and more rides. A few weeks ago we took Parker to the Williamson County Fair (which has become a little tradition for us). It is so great that he seems to enjoy it more and more each year! Thank goodness we were smart enough to get him the unlimited rides pass, since we remembered from last year that it can add up pretty fast paying for them one at a time. It's a good thing we did because Parker kept wanting to ride the same rides over, and over and over! NOT hi...

THE COLLINS FAMILY: Spring, Birthdays and Easter!
http://parkeranthony.blogspot.com/2010/04/spring-birthdays-and-easter.html
Monday, April 26, 2010. Spring, Birthdays and Easter! I LOVE spring, and get so excited when it gets here. We have had a fun and busy start to spring around here. Parker turned 4 years old on March 31st, which is so hard to believe. I know everyone says how fast time goes by, but it truly truly does! He was pretty excited about his Birthday this year and for about a month he would ask me "Is it my Birthday today? So, he was pretty happy when it finally got here! Then, the weekend rolled along and it was ...

THE COLLINS FAMILY: February 2010
http://parkeranthony.blogspot.com/2010_02_01_archive.html
Friday, February 12, 2010. So, I am a little behind. I can not believe I have not blogged since September. I have had a couple of people "fuss" at me lately and about being behind, which I am thankful for- because they got me motivated to get caught up :) So- go ahead and get a drink and a snack because this is going to take me a while to bring you up to speed with everything. So, here it goes. My little nephew Carson was also born this fall, and he is precious! It was a pretty sad day for Parker when th...

THE COLLINS FAMILY: May 2008
http://parkeranthony.blogspot.com/2008_05_01_archive.html
Thursday, May 15, 2008. I am a little behind in getting this posted, but things have been a little chaotic around here lately. For those of you that do not know, Anthony started a new job 3 weeks ago! This is an awesome opportunity for him, and he is so excited to start this new chapter in his career. He has been in WI for training the past 3 weeks, which means Parker and I have been here by ourselves! He loved going down the toddler slides, and loved floating with us on the lazy river! He also loved bei...

THE COLLINS FAMILY: Our Summer....
http://parkeranthony.blogspot.com/2010/09/our-summer.html
Tuesday, September 14, 2010. OK I am the first to admit that I am a slacker blogger, big time! I really need to be better at this and not wait so long in between posts. We had such a fun and exciting summer, that there is no way I can re-cap it all- so I will just hit some of the highlights and include lots of pictures :). As always, we had lots of fun weekends at the lake! We also had our annual trip to Mexico Beach, FL with about 75 of our closest family members! This was the first year that ALL of my ...

Score Moore: Pumpkin Scones with Cinnamon Glaze
http://razorbacklovers.blogspot.com/2011/11/pumpkin-scones-with-cinnamon-glaze.html
Life as a football coach's wife. Pumpkin Scones with Cinnamon Glaze. Yet another great pumpkin dessert found on Pinterest (from the blog sweetpeaskitchen. I made some alterations (suprised, anyone? To mine but I wish I hadn't this time. I used splenda instead of sugar and the scones weren't very sweet. They tasted more like a shortbread. I only used one of the icing glazes instead of both, and I wish I had used both. Take a look at the ingredients. Pumpkin Scones with Cinnamon Glaze. 2 c all-purpose flour.

http://razorbacklovers.blogspot.com/2011/10/pumpkin-chocolate-chip-bars-best-ever.html
Life as a football coach's wife. Pumpkin Chocolate Chip Bars-best ever! This is only the best pumpkin recipe I've yet to make. Hands.down! I made D take some to work, and I took some as well, for the sole purpose of getting them out of the house so that I didn't finish them all off myself! They were THAT good. This recipe was adapted from www.bakeat350.blogspot.com. Pumpkin Chocolate Chip Bars. This was before they went into the oven. 2 c all purpose flour. 1 Tbsp pumpkin pie spice. 1 tsp baking soda.

Life as a football coach's wife. Ok, I know this sounds a little different, but I tried two new recipes today and liked them both! And the good news is, they are both lower in fat and calories than the original versions. You may be very surprised at some of the ingredients, but I would NOT lie to you. They taste just the same, if not better than the original. In fact, you'd never know if you tasted them and I hadn't told you what was in them. Take a look. 1 can black beans, drained, rinsed. Preheat oven ...
