Simon Hopkinson Recipe - Baked Almond

4 eggs, 3 separated. Few drops almond essence. 100g whole skinned almonds, ground until fine. A little extra butter and caster sugar for lining the moulds. Pre-heat the oven to 180C/gas mark 4. Bake in the oven for about 25-30 minutes until the puddings have risen nicely and the surfaces are shiny and crisp. Leave to cool for 5 minutes then eat with very cold, thick cream. Stuffed with mashed potato and buttered brussel sprouts, apple sauce and rich gravy. Buy for 16.25. Buy for 16.00.

600-650g potatoes [maris piper, preferably], well scrubbed and cut in half, but unpeeled. A thick slice of soft butter. 50g trimmed spring onions, chopped. 4-5 sprigs sage, leaves chopped. Friday, July 31, 2015. Cheese Shallot Potato Pie #FridayPieDay. Modeled on a Lancashire cheese and onion pie, this guy has a decidedly French accent with the substitution of Cantal for the Lancashire cheese and shallots for the onions. I sliced in some waxy potatoes to make the pie a little heartier and added cheese to the shortcrust for even more flavor, both good decisions. Last week I was staying with dear friends in the Lot-et-Garonne region of France. Daily trips to the markets were de rigueur.
