Tuesday, October 11, 2011. Tonight's dinner for one took a little bit of time to get ready but was well worth it! This dinner was so incredibly good and the only leftover I have to deal with is the risotto. To make it even better, I didn't have to wash my plate since it was a fabulous bamboo. Tuesday, February 22, 2011. Ridiculously Delicious Challenge Stage 2. Getting a box of mystery ingredients and a week to come up with an original recipe using two of those ingredients felt a little bit like I would imagine it would feel to be on an episode of Choppped. After reading up on all of the ingredients I settled on the Juniper Berries and Szechuan. I brought the wine and seasonings to a simmer in a non-stick skillet. Then added the Salmon fillets, covered the pan and let them cook for 5 minutes.

And while I was watching the Vikings break my heart in football today, I consoled myself with a new pizza recipe using polenta as the crust. It was so easy and so good! And since I still had Kale salad left, I had it again with my pizza. Perfect and very little fuss for dinner. This is craziness after lunch :). Their survival hut. It is pouring rain, but they were troupers and got it done! The snowball fight at Calavares Big trees. Me and my girlie. Our hike at the Big Trees. Really beautiful (and cold)! Sunrise, day 2. FUN time together. I am so happy that they ALL had an amazing time! Us with the Bishop.
