I found a variant of this recipe and decided to tweak it just a bit. 1 whole onion, chopped. 2 stalks celery, chopped fine. 2 cups fresh spinach, rough chopped. 3-4 cups potatoes, chopped and peeled. 1 cup heavy cream.
