Just Something I Wrote: February 2010

Just Something I Wrote. That Good Salad (Gluten Free). Posted by Karen McCurdy. February 2, 2010. I found the original "That Good Salad" recipe years ago in a cooking magazine. It quickly became one of our family favorites, and truthfully one of the reasons that we started to eat "real" lettuce ("real" lettuces are the green varieties of lettuce rather than "fake" lettuce referring to iceberg lettuce). When I could no longer eat wheat - or rather when I decided that I would. That Good Gluten Free Salad.

Just Something I Wrote: Gluten Free Flour
http://karenmccurdy.blogspot.com/2010/01/gluten-free-flour.html
Just Something I Wrote. Posted by Karen McCurdy. January 16, 2010. One of the first things about cooking gluten free is to find a decent flour substitute. If you read the ingredients of most gluten free flour from the store it is either mostly rice flour or it contains fava beans. While both flours have their place, rice is gritty and bean flour has a definite "taste". The best gluten free flour recipe I have found is in Nearly Normal Cooking for Gluten-Free Eating. 1 cup white rice flour. I made some fl...

Just Something I Wrote. Posted by Karen McCurdy. March 31, 2010. I have been buying Spaghetti sauce for ages. We've tried almost every kind and sometimes find one we like for awhile. Then one day I used an Italian recipe from Italian Cookery by Pauline Barrese (whose cover has long since fallen off and cost $4.95 whenever someone bought it). The recipe is easy. And it tastes twice as good as boughten and it is "Gluten Free Anyway"! Mama Mia - what was I thinking! Spaghetti Aglio E Olio. March 30, 2010.

Just Something I Wrote: Portobello Pork Chops
http://karenmccurdy.blogspot.com/2010/04/portobello-pork-chops.html
Just Something I Wrote. Posted by Karen McCurdy. April 2, 2010. My daughter brought this recipe home from foods class. It was very good despite the fact that I bought the wrong mushrooms - I guess that means the title doesn't exactly fit. We could call it "Small Brown Mushrooms in the Bin on the Far Right Pork Chops" - either way it is a keeper! 1 1/2 Cups mild salsa (Double check ingredients to make sure it is Gluten Free). 1 Cup chopped Portobello mushrooms. 1 Cup shredded cheddar cheese.

Just Something I Wrote. Posted by Karen McCurdy. January 25, 2010. I have seen this particular recipe several places, so I am not sure who to give credit to. The second time I made this cake I had a nice mess on my floor. Persistence pays off. I made it again and it is very worthwhile. Cocoa powder serves as the flour in this recipe:. 8 Ounces Semi-Sweet Chocolate Chips. 1 1/4 Cup Sugar. 1 Cup unsweetened cocoa powder (sifted). 1 Preheat oven to 350 degrees. 3 Melt butter over medium heat. Just Something I Wrote: Slow-Cooked Stuffed Peppers
http://karenmccurdy.blogspot.com/2010/01/slow-cooked-stuffed-peppers.html
Just Something I Wrote. Posted by Karen McCurdy. January 24, 2010. This recipe was in the January 13, 2010 Life section of the Deseret News. Since it didn't have any gluten ingredients I gave it a try. I used green rather than red peppers, because they were less expensive. It was good and I will definitely make it again. 4 large sweet red peppers (or any color you want). 1 15-ounce can black beans, rinsed and drained. 1 cup (4 ounces) shredded Jack Cheese (I used colby jack). 1 small onion chopped. Just Something I Wrote. Pineapple Cherry Ice Cream. Posted by Karen McCurdy. April 4, 2010. I found this Ice Cream Recipe in a Quick Cooking magazine. I am sorry to say that I don't know which one because I had ripped out the page, obviously meaning to try it years ago. It is on page 66 of some month or year. Johanna Gimmeson was the person who submitted it. It is pretty and flavorful and "gluten free anyway.". Pineapple Cherry Ice Cream. 2 1/2 cups sugar. 1 package (6 ounces) cherry gelatin.
