Monday, June 23, 2014. Two favourite Telugu dishes. The humble ridge gourd.dice after removing the hard ridge. Heat oil in a pan,add mustard seed let it crackle,add Urag dhal,hing,dried red chillies and salt,to this add the ridge gourd and cover and cook for three minutes then toss around till all the liquid evaporates . The ridge gourd releases a lot of water when cooked. Most gourds can be made in this way and it's great to taste and healthy to boot. Dried red chillies- 4(more if you want it spicy ).

Wednesday, September 24, 2008. Pork chops with good amount of fat-5 pieces. Olive oil-1 tbl sp. Soy sauce-2 tbl sp. Hoisin sauce-1 tbl sp. Oyster sauce-2 tbl sp. Tomato sauce-2 tbl sp. Ginger and garlic paste (ground with cardamom,cinnamon,pepper,cloves and cumin seeds) 1 tbl sp. Red wine-use half a glass or more(if the wine is not fit for drinking never waste it just add to the dish). Red onions-4 medium ones sliced. Fresh coriander leaves for garnish. Tuesday, November 17, 2009. Ethekai appam (banana fritters). Ripe bananas -2(cut into strips). Water-enough to make a runny batter. Mix together the maida,sugar,baking soda,salt and water and whisk into a runny batter.Heat oil till its very hot.Turn flame to a slow setting.Dip banana strips into batter and deep fry.Remove when golden brown and leave on kitchen paper to drain excess oil. Monday, September 28, 2009. Coconut-1/4 cut into small bits. Coconut oil-a few tablespoons. 1tbs (home made with all spices and ginger and garlic). Marinate the beef with garam. Chill powder, coriander. And turmeric powder and salt.Add a bit of water and cook in pressure cooker until. The beef is well done.If there is any stock left leave on simmer until all the liquid is reduced and coated on to the beef. Till the beef turns a dark brown.Serve hot with steamed rice. Essential for a malayalee kitchen.

Sunday, October 11, 2009. Grated coconut-2 large spoons. Chop the pavaka and onions into very fine bits.Add grated coconut,chopped green chillies,salt and crushed garlic.Add enough water to cook.When the water is all dried up and the pavaka is cooked,take off the flame.Heat a bit of oil,splutter mustard and curry leaves and add to dish.Serve as part of a meal. Sunday, January 11, 2009. Golden fried chicken with potatoes. Curd-2 to 3 tablespoons(thick curd without water). Chili powder-1 to 2 tablespoons. Meat masala-2 table spoons(this is the made at home kind). Marinade all chicken with all the above ingredients and keep aside. Pressure cook the potatoes till they are half done,cool and remove skin.
