Also, tomatoes, including heirloom, roma and cherry tomatoes, some corn, and peaches. Since both Nick and I are sick of eggplant and okra, I’m going to make a ratatouille with those and tomatoes, onion and pepper for a potluck tomorrow. I think it will be good, and it will be nice to have other people help us eat it! From your own site.

I made the Super Stuffed Tortillas yesterday, using a squash, but I still have a lot of produce left, so I think I’ll put tomatoes on a pizza tonight, and make Eggplant Parmesan tomorrow. For the love of food – easy, healthy, and delicious. July 19, 2010. 4 cups cantaloupe, cubed and frozen. 1 cup orange juice. Cup cream of coconut. To prepare the cantaloupe if using fresh, slice it in half then scoop out all the seeds with a spoon. Cut into wedges and peel (or peel and cut into wedges, if you prefer), cube, then spread onto a large plate or cookie sheet and freeze overnight. Whirl the cantaloupe cubes in your blender until smooth. You may need to do this in batches. From → Breakfast.

Large onion, chopped. 1 tsp olive oil. 3 small or 1 large yellow squash, chopped. 2 big handfuls of spinach, chopped. 2 cloves of garlic, minced. 1 link turkey Italian sausage, chopped. 1 Sauté onion and sweet potato over medium low heat in olive oil until the onion turns clear. 2 Add broth and cover until potatoes are tender. 5 Serve sprinkled with Parmesan.
