Also, tomatoes, including heirloom, roma and cherry tomatoes, some corn, and peaches. Since both Nick and I are sick of eggplant and okra, I’m going to make a ratatouille with those and tomatoes, onion and pepper for a potluck tomorrow. I think it will be good, and it will be nice to have other people help us eat it! From your own site.

I made the Super Stuffed Tortillas yesterday, using a squash, but I still have a lot of produce left, so I think I’ll put tomatoes on a pizza tonight, and make Eggplant Parmesan tomorrow. To prepare the cantaloupe if using fresh, slice it in half then scoop out all the seeds with a spoon.
