Just a place for some ramblings. Cheesepalooza Challenge 9 – Brie Part 2. For the making of this cheese! After 6 weeks of careful ripening the Brie is ready for tasting! Our cheese did not seem to have as much mold development as others but it is certainly there. The cheese is also soft hen lightly pressed. Since I am bringing it to my in laws for a BBQ tonight I thought I should check to make sure it was edible, so that I do not bring shame to te family! So it is carefully sliced in half and voila!

Even though the cheeses have been interesting and some challenging, we now bring another element – time, which impacts any desire of instant gratification (instant is relative in cheese making and so far 5 days is the longest we had to wait) and also less controllable. As well these recipes a lot more milk! We chose the Caerphilly. That called for 16 liters of milk!

For November, we ended up making the junket mozzarella, some chèvre and some crescenza, but no braided string cheese yet (my excuse is that I was not able to find ph test strips). We used the modified recipe provided on A Canadian Foodie. Adjustment to replace the junket with rennet. We also used Vital Greens whole non-homogenized milk.
