HEARTS OF PALM and ORANGE SALAD W/ A CITRUS VINEGRETTE. 2 blood oranges or other oranges that are in season. 1/2 teaspoon Dijon mustard. 1 tablespoon fresh lemon juice. 3 to 4 tablespoons extra-virgin olive oil. 1 teaspoon red wine vinegar, optional. 1 TB thinly sliced red onion. Small head frisée lettuce.

Tablespoon Thai Red Curry Paste. Teaspoon Thai Fish Sauce. Small Red Pepper, diced. Cup Cookin’ Greens of your choice (frozen). Cups Cooked Basmati Rice. Pound Medium Shrimp, peeled and cleaned. Tablespoon thinly sliced Chives. Limes, sliced in half or quartered. Stir in the chives. Serve in bowls with lime wedges.
