Friday, July 29, 2011. Road Trip Days 3 and 4: Utah and Wyoming. I wasn't expecting much from Utah; I thought it would be dry and flat, but it was anything but that! Sunday, October 31, 2010. Sun-Dried Tomato and Tortellini Soup. This is one my of favorite soups. It's so easy, and the flavor is wonderful. I've made the soup many times, and found a few shortcuts to save you time (for example, making it all in one pot, as opposed to using two pots), and a few substitutions to make it a bit more healthy (for example, not using two cups of half n' half). Sun-Dried Tomato and Tortellini Soup. 2 cans tomato soup. 2 c vegetable broth. 1 c half n' half. 1 tsp onion powder.
