Zucchini Risotto with Sun-Dried Tomatoes - WW. 1 tablespoon olive oil. 3 1/2 cups vegetable broth. 1/2 cup tomato juice. 1/2 cup white wine. 6 shallots, finely chopped. 4 medium zucchini, diced. 2/3 cup sun-dried tomatoes, chopped (I used fresh tomatoes from my garden). 1 1/3 cups arborio rice. 1/2 cup chopped parsley. 3 tbsp grated Parmesan cheese. We ended up at this restaurant a few blocks down from the main strip. We were sold with the buy one drink get the second one free! The food was wonderful…the service was absolutely crappy!
