Blue Label Burger Blend – Beer Cooler Sous Vide Burgers. Back when John Tesar was slinging those divine burgers at his much missed “The Commissary,” many people heard the term c-Vap for the first time. It’s all about getting a perfectly even and accurate temperature throughout the entire beef patty while maintaing virtually all the juices. He explains it here:. It is basically a sous vide. Process. I had yet to purchase my Polyscience Sous Vide Professional Immersion Circulator. When the air is out &#821...

Austin Community College came to me to ask if I would help them reach a wider audience here in Austin. I came up with a plan to celebrate the passion of being associated with ACC and elevate the image of the community college student. The entire 6-spot campaign can be viewed on YouTube here. I love it when you call me…. February 13, 2011. Unlike almost every other food culture, the Koreans don’t seemed to have f*cked up their food the least of all of them. The food didn’t become modified for American tastes. Anthony Bourdain, NYC Outer Boroughs. No Reservations. 2560 Royal Ln # 105. Dallas, TX 75229. My foray into the world of homebrewing. Watch out where the huskies go, and don’t you eat that yellow snow! Oh Winter, you foul temptress. Last summer I switched over to AG brewing, which was quickly followed by a switch to brewing outside. Due to the crazy winter weather I have not had a chance to brew in the last few months. 48 hours… and I need a chiller. | Brewdaddy's Blog

https://brewdaddy.wordpress.com/2009/09/02/48-hours-and-i-need-a-chiller

My foray into the world of homebrewing. 48 hours… and I need a chiller. With an active fermentation running – and the need to reclaim the utility room – I knew I would have to move my brewing out of the house and into the garage. After a bit of research, I found some plans for a “son of Frankenstein” chiller. This would basically be an insulated box that I could build to regulate the temperature. All three side are insulated with 2″ thick foam insulation sheets that were sealed with expanding foam. It&#8...

Friday night brewing… my first wort | Brewdaddy's Blog

https://brewdaddy.wordpress.com/2009/09/01/friday-night-brewing-my-first-wort

My foray into the world of homebrewing. Friday night brewing… my first wort. I had the equipment setup and sanitized (for the first attempt I used a bleach solution and let everything soak for twenty minutes). I had read through all of the instructions on boiling and fermenting (at least ten times over). I was ready to brew…. Lesson learned: don’t ever turn away from a boiling wort. I added 2.5 gallons of cold spring water to the primary and then added my cooled wort, oxygenating the mix my sloshing ...

Thar she blows! | Brewdaddy's Blog

https://brewdaddy.wordpress.com/2009/09/01/thar-she-blows

My foray into the world of homebrewing. For 48 hours, I had not touched/bothered/acknowledged my primary fermentation. Within a few hours of pitching the yeast, my airlock was bubbling away, so I thought the best thing to do would be to leave it alone and let the little yeast-ies do their business. Curiosity getting the better of me, I made my way over to the bucket and noticed something was a little off…. The airlock, which had been halfway-filled with sanitized water, was now filled with an amber liquid.
