http://thecollegiatecook.blogspot.com/2012_03_01_archive.html

Sunday, March 18, 2012. This may be the simplest recipe I ever post on my blog but it is too delicious not to share. Its chocolate pudding, brownie batter, rich chocolate mousse, its every chocolate treat youve been craving with one exception. Its healthy! Monday, March 5, 2012. Citrus and Soy Mushrooms and Snap Peas. When you consume as many pounds (dare I say tons? Of vegetables as we do, you have to get creative. Steamed broccoli is transformed into pesto. Asparagus is wrapped in parchment paper.

Dark Chocolate Yogurt Cake | Cooking.In.College

http://thecollegiatecook.blogspot.com/2012/02/dark-chocolate-yogurt-cake.html

Tuesday, February 14, 2012. Dark Chocolate Yogurt Cake. Chocolate is so very comforting and sometimes, like in the midst of my final semester as an undergrad, it is completely and utterly necessary. Just in time for Valentine's Day, this moist and decadent, yet simply healthy chocolate cake is perfect for dipping into a chocolate fondue or topping with strawberries and whipped cream. I had Brad try this before I told him I had "healthified" it and he said he never would have known. 1/2 tsp baking soda.

Sunday, March 27, 2011. Dear Ina Garten,. Adapted from Ina Garten's Herbed Baked Eggs. 1/4 tsp minced garlic. 1/4 tsp each finely chopped fresh thyme, rosemary, and parsley (a scant 1/4 tsp is perfect, dried herbs would work well too just use a little bit less). 2 tbsp shredded parmesan cheese. 3 extra large eggs. 1 tbsp skim milk. 1/4 tbsp butter or enough butter spray to lightly coat the inside of the dish. Mix the garlic, thyme, rosemary, parsley, and parmesan cheese together and set aside for now.

Butternut Squash and Chickpea Stew with Lemon Parsley Couscous | Cooking.In.College

http://thecollegiatecook.blogspot.com/2010/10/butternut-squash-and-chickpea-stew-with.html

Tuesday, October 5, 2010. Butternut Squash and Chickpea Stew with Lemon Parsley Couscous. This easy to prepare, hearty stew is a great meal to make when you are low on time and in the mood for a big bowl of something warm and comforting. The hint of rosemary gives it a "cooked all-day" flavor while the lemon in the couscous livens up the entire dish. 1/4 cup low sodium vegetable broth. 1 tbsp minced garlic. 1 large carrot, peeled and diced. 1/4 small white onion, diced. 1 tsp ground cumin. Divide couscou...
