Monday, January 31, 2011. 1 1/2 cups chopped onions. 1 Tbs olive oil. 1 tsp kosher salt. 1/2 tsp fresh ground pepper. 1/2 tsp fresh thyme leaves (¼ tsp dried). 2 1/2 Tbs Worcestershire sauce. 1/3 cup chicken stock. 3/4 tsp tomato paste. 2 tsp dijon mustard. 2 1/2 lbs ground turkey (93/7, no leaner). 3/4 cup plain bread crumbs. 2 eggs, beaten. 2 tsp brown sugar. 2 tsp white or apple-cider vinegar. 1 Preheat oven to 375°. Flank is a delicious cut of beef, full of flavor and juicy, so long as it isn't overcooked, at which point your Grandmother would come out and fuss about "cooked to leather" while you were in charge of Easter Sunday grilling. Sorry Grandmom. Well, that was 30 years ago, and I've learned to appreciate that particular cut, and how to cook it. Stuffed and rolled flank steak in a deli platter. 1 lb flank steak, butterflied. 1 cup meatball mix (or sausage). Kitchen twine and scissors.

Sunday, June 24, 2012. I found this recipe on You Tube awhile back, here's a link. Ingredients - makes two loaves. 2 packages active dry yeast. 2 1/4 cups water. 6 Tablespoons solid shortening. 7-11 cups all-purpose flour (you may not use all of it ). In 1/4 cup of warm water (about 100F) dissolve the yeast, 1 teaspoon of the sugar and let stand until foamy. Turn off the heat. Now add the shortening and the rest of the sugar and the salt, stirring to dissolve, set aside to cool in a large mixing bowl.

Leftover ground turkey from sliders (mini burgers), half-used box of chicken stock, vegetables needing to be used up, and a can of cannellini beans sitting in the pantry seemed to cry out "soup! So, soup it was, and boy, what a quick, delicious mid-week meal we had. Hope you give this a try. I think you'll enjoy it. Cannellini Bean and Meatball Soup. Makes 4 nice bowls. 8 oz ground turkey (93/7 lean-to-fat). 2 T dried Italian bread crumbs.
