GF Vegan Corn Bread. 425g GM Free Polenta/Coarse Corn Meal. 3 tsp baking powder. 3 tsp baking soda. 475 liquid (rice/coconut milk). 5 tbsp olive oil. 2 tbsp chia seeds, crushed in mortar and pestle, mixed with 6 tbsp water and left to sit for 15 mins. 1 tsp cider vinegar. Preheat oven to 200 degree celcius. Oil the base and sides of a baking tray. Put tray in oven to heat for five mins.

Orange zest (wash orange first if non-organic orange). Walnuts, roughly chopped. Sesame, heated till fragrant. Some sort of dried nut. Fig or date perhaps? Missing the one day to buy your organic veggies, does one cave and go to the supermarket or try and make do with what you have and see how long you last? I tried the latter and had an interesting week. There were, however, some gems like the pretty plate above. Tumeric buckwheat, sprouted mung beans, spiced broccoli and red cabbage with wild garlic and a boiled egg!
