Wednesday, March 12, 2008. Flourless Peanut Butter Cookies. By far, the favorite GF cookie we have tried so far. 1 cup brown sugar. 1 cup peanut butter, Skippy or Jif. 1 1/4 tsp baking soda. 3/4 cup GF chocolate chips *. 1 Preheat oven 350 degrees Fahrenheit. Prepare cookie sheets by lining with parchment paper or spraying with non-stick cooking spray. 2 Cream together in a large mixing bowl the brown sugar and peanut butter. 3 Add 2 eggs and mix thoroughly. 5 Add chocolate chips by hand and blend.

In a large mixing bowl, combine the rice flour, tapioca flour, potato starch flour, brown sugar, baking powder, baking soda and salt. In another bowl, mix the eggs, buttermilk and oil. Add the egg mixture to the flour mixture and combine well but do not over mix. Makes 18 - 20 5-inch pancakes.
