I remember 20 years ago workings at Frederick Memorial Hospital, when there still weren’t any separate off campus rehab clinics and we serviced the outpatient clients in house. Chicken spread (recipe below). Fresh tortillas (recipe here. Mix black beans and green chilies and tomatoes. Heat in microwave for about a minute. Take tortilla and spread items in this order: cheese, rice, chicken spread, salsa, Bean/chili/tomato mixture, cheese. Place tortilla on top. Cook on griddle until cheese melts.
