It was a whirlwind 8 days that had us traveling all over the island, but we had such a great time. We've also had homeschool field trips, family days exploring the island, and all sorts of events in between. Here's a collection of photographs from the past 2 months- enjoy! I know, sounds crazy, but grilling the romaine lettuce before chopping for this salad changes the taste entirely and lends the salad a smoky, earthy flavor that is out-of-this-world good. Try it! 2 romaine hearts, washed and halved lengthwise. Prepared creamy-style Caesar dressing (from the refrigerated produce aisle- I like Lighthouse brand, personally). Makes 2 sandwiches. 4 slices good-quality white bread (you can use wheat, but nothing too 'grainy'). 6 thin slices of honey-roasted deli turkey. 4 slices smoked cheddar or Irish white cheddar. 1 apple, cored and thinly sliced. 1/4 cup half-n-half or milk. 1 Tbsp. butter.
