Eastern Carolina Pig Pickin’ Sauce. A simple, sweet and sour vinegar sauce, that’s great with pork. 250ml Distilled White Vinegar. 1 tblsp Dark Brown Sugar. 1 tsp Cayenne Pepper. Frac12; tsp Chilli Pepper Sauce. Frac12; tsp Chilli Pepper Flakes. Frac14; tsp Ground Black Pepper. Combine all ingredients, and blend well. Western Carolina Pig Dip. Passed the East-West divide of Carolina, “sauce” becomes “dip”, which can be used to baste, slather, or dunk prime ‘cue. This one’s sweet and tangy; great with pulled pork. 2 tblsp Brown Sugar. 2 tsp Worcestershire Sauce. Frac14; tsp Ground Black Pepper. Dash of Hot Sauce to taste.
