Wednesday, March 16, 2011. Apricot and Muesli Balls. I have had this recipe on my "to convert" list for such a long time. It's really such an easy recipe I'm not sure why it took me so long, however, I got to it today. It's a great sweetener-free recipe - no sugar, no honey, no sweetened condensed milk. It uses partially reconstituted dried apricots for sweetness and for binding. The original recipe is from Good Taste magazine. Dried apple (mmm, imagine an apricot and apple crumble version of this).

Getting back into the swing of a routine now that my husband is back at work after 2 months at home, and given that it's been getting a little fresh in the mornings, I decided to make porridge for breakfast today. I'd seen that Thermomix Australia had updated their porridge recipe. Leftover Oatmeal Muffins with Apple. Preheat the oven to 200ºC. Butter the muffin pans or line with paper wrappers. Combine dry ingredients together in small bowl.

It looks so impressive, and I think it would make a stunning starter to a dinner party, or, if one used mini easter eggs inside, a perfect Good Friday breakfast! I used the following fillings in one or more of the little rolls:. Sundried tomatoes and grated parmesan. Vintage cheddar cheese and quince paste. Almond, cashew and peanut butter. Fig and orange jam.
