From the kitchens of our family. My mom started making this salad at least 15 years ago, and it's always been a favorite of mine. Crunchy cabbage, noodles and nuts in a sweet dressing - yum! 1 medium head cabbage (red or green or a mixture of the two), shredded or sliced very thinly, about 4 1/2 c. 5 green onions, thinly sliced. 15 oz can sweet corn niblets, drained. 9 oz frozen sweet peas. 6 oz can sliced mushrooms, drained. 1/4 c olive oil. 2 tsp sesame oil (optional, but tasty). 1/4 tsp. pepper. Friday, January 6, 2012. November 12, 2011. So my Dad was in town for the weekend. Next Stop, my Grandma and Grandpa Burgoyne. My mom comes on the weekend to take care of them. Since she lives out of town, she gets the weekends. So we stopped to say hi to everyone. Grandma is 84 years old and just survived 6 months of chemo, because of cancer she discovered last year. She is an amazing woman and I hope she never has to do chemo again. Surprise, Surprise,. Satya and her girls showed up to say Hi too!

From the kitchens of our family. This will be my new go-to recipe for enchilada night. Adapted from Molly Katzen's "Enchanted Broccoli Forest" cookbook. 2 Tab olive oil. 1 1/2 c. minced onion. 6 cloves garlic, minced. 3/4 tsp. salt. 1 large bell pepper, minced. 5 small (6 inch) zucchini, diced. 14 oz can white beans (or any type of beans), drained and rinsed. 1 1/2 tsp. ground cumin. 1 Tab dried basil. 1 1/2 tsp. dried oregano. Cayenne and black pepper to taste. 14 oz can green enchilada sauce.

From the kitchens of our family. Whole Wheat Pumpkin Waffles. I did a test with the missionaries and served them both homemade regular waffles and these whole wheat pumpkin waffles one evening for dinner, and the pumpkin waffles won hands down. So know from this that no taste or appearance is sacrificed by going whole wheat here. They're beautiful, delicious and will make your house smell heavenly. We've made them many times the past few months, and I think we've found a winner! 1 c whole wheat flour.

Have you ever met someone who keeps all of their best recipes a secret? 8 oz (2 sticks) butter, room temp. 1/2 c granulated sugar. 1/8 tsp. salt. 6 extra lg. room temp eggs. 2 Tab lemon zest. 1 c fresh lemon juice. Powdered sugar for dusting. Pour onto hot baked crust. Bake 30 minutes more or until it looks set (not too jiggly). Cool completely to allow filling to set up. Dust with powdered sugar.
