Griddle Pan Pitta Pockets. I always love anything you can make in one pan, eat with your hands and which doesn't involve too much interaction so you can have a beer while you cook. So how about this; get the griddle pan nice and hot, chuck everything in at once, wander off and come back 5 minutes later to stuff it in a pitta. Add oil to a griddle pan and place on a hot heat. Add the fillings in separate corners. Squeeze over the pan then leave on the kale. Return the pan to the heat and add a pitta.

Green Lentil Dipping Bowl. Lovely fresh little spring bowl; the sun was out last weekend so something quick, light and cutlery-free was called for while settling in to a rickety old deck chair in the garden and welcoming in the spring. Squeeze in a handful of black olives. Plenty of sliced basil. Rinse tinned green lentils. Under a tap then add. Add a couple of knobs of butter. And squeeze in the lemon. In and top with tomato. Four Ingredient Meals; Asparagus and Halloumi Bagel. Not the cheapest of four ingredient meals, but definitely one of the best! This dish would have been really special with a little lemon in the asparagus mayo, but considering I only used four ingredients in this little snack I was absolutely psyched with it. Got to be honest, a little more asparagus, a little less halloumi and a good squeeze of lemon. Oil and toast wholemeal bagel. Ends, halve and cook in salted boiling water for 3 mins. Pea and Sorrel Purée. This was originally going to be pea and potato cakes, then soup, and eventually landed at a sort of puree. None the less a very good one; sweet, light in flavour but thick and fulfilling in texture with a strong herby vibe and warming chilli's. Sorrel is great as it has so much zing and zesty flavour while being a really fibrous leaf, giving thick texture but a light, lemony flavour to the dish. And few sliced new potatoes. Very lightly heat a pan and add milk. Pea and Sorrel Purée.
