Serves 2 people, 315 calories per quesadilla):. 2 whole wheat tortillas. 1 can no-drain tuna. 2 oz queso fresco (or favorite cheese! 2 wedges Laughing Cow Chipotle and Queso Fresco. 1 T diced red onion. 2 T diced cilantro. Paprika, s&p to taste. Jalapeños, sour cream, salsa for garnish. Most importantly in Mex-style cooking, there are tons of low-cal "freebies" like lettuce, tomatoes, onion, jalapeños, cilantro which pack a ton of flavor.
