The fire department covers the entire island before Christmas (a different neighborhood each night for a couple weeks) with a decorated fire truck complete with music! And they give the kids candy canes! Under the Christmas Tree. This is the boat we were on.

From www.RecipeGirl.com. 1/2 cup 1% low fat cottage cheese. 1/4 cup fresh parsley. 1/4 tsp grated lemon rind. 1 Tbsp freshly squeezed lemon juice. 1/2 tsp ground coriander. 1 (15 ounce) can chickpeas, drain and save chickpea liquid (then rinse and drain). 1 Place all ingredients in food processor; process until smooth. Use reserved chickpea liquid to thin out hummus, if needed. Taste and adjust spices, as desired. 2 Scoop hummus into a dish, cover and store in refrigerator.
