On this Mother's Day weekend it's all about the memories and family. 4 eggs beaten till foamy - add 1 3/4 cup sugar and beat well - add 1 cup canola oil and 1 tsp vanilla - mix till well blended. Add 2 cups sifted flour - 1 tsp soda, 1/4 tsp salt, 2 tsp cinnamon. Then fold in 4 apples peeled and cubed and 1/2 cup chopped toasted nuts. (I think MeeMaw used walnuts.).
