Sweet potato & coconut milk gratin — Tony's Kitchen
http://tonyskitchen.com/blog/sweet-potato-coconut-milk-gratin
Adventures in cooking and eating! Sweet potato and coconut milk gratin. Holy cow, has it been almost a year since I've posted last? Well, I'm back and I'm going to slide this post in just before I hit the 1-year-without-posting mark. I've even brought with me a little design refresh. I'm still tweaking the look and layout but I'm going for a cleaner design to the blog. Hope you like it. SWEET POTATO and COCONUT MILK GRATIN. Ingredients: 2 large sweet potatoes. 1 - 14.5oz can of coconut milk. Empty the co...
Turkey meatloaf — Tony's Kitchen
http://tonyskitchen.com/blog/2012/1/17/turkey-meatloaf.html
Adventures in cooking and eating! Another important step in making this, or any meatloaf, for that matter, is to not work the mixture too much. Use a light hand when you mix up the ingredients. You want everything to be combined but do it gently. It doesn't require mashing and squishing. Otherwise, you'll end up with a tough meatloaf. Ingredients: 2-1/2 lbs of ground turkey. 1 large minced onion. 1/2 cup plain breadcrumbs. 2-3 cloves minced garlic. 1/4 tsp dried thyme. Preheat oven to 375 . Take the meat...
Chicken with 40 cloves of garlic — Tony's Kitchen
http://tonyskitchen.com/blog/2012/3/26/chicken-with-40-cloves-of-garlic.html
Adventures in cooking and eating! Chicken with 40 cloves of garlic. I know what you're thinking and no, I did not count the cloves of garlic. This recipe would probably be more accurately called chicken with a whole heckuvalotta garlic. Regardless of what the recipe is called, it's very tasty, easy to prepare, and basically, a one-pot recipe. This is just the type of recipe that I love! I love the one-pot nature of this recipe because I can call into duty my trusty Le Creuset Dutch oven. 1 cup white wine.
Chicken Piccata — Tony's Kitchen
http://tonyskitchen.com/blog/2011/11/21/chicken-piccata.html
Adventures in cooking and eating! Chicken Piccata always reminds me of the first episode of Top Chef, Season 4, wherein one of the cheftestants did not know what chicken piccata was and made a mess of a dish. You can read about that particular episode here. Ingredients: 1.5 lbs of chicken cutlets,. 2 cloves minced garlic. 1 cup of white wine. 1/2 cup chicken stock. Juice from half of a lemon,. Season chicken cutlets with salt and pepper. In a hot skillet, add olive oil to film the bottom of the pan.
Chicken and dumplings — Tony's Kitchen
http://tonyskitchen.com/blog/2012/1/25/chicken-and-dumplings.html
Adventures in cooking and eating! I was tempted to not post this one at all because I didn't think the picture was very good. However, it did taste really good and when you make this it will look better in real life! I also wanted to post this one because I wanted to stress how much better your food will taste if you use homemade chicken stock versus anything that comes in a can or a box at the store. I make my chicken stock with chicken backs so I needed to make some additional chicken for my version.

Harbinger… | The fantastical ramblings of a chronic over-thinker
https://turnjacson.wordpress.com/2014/08/13/harbinger
The fantastical ramblings of a chronic over-thinker. Where I’ve Been…. August 13, 2014. I wanted to write about the pointless killing of an unarmed black kid by a police officer. I wanted to write about the double standard that exists in America… that results in a Caucasian man being able to carry a gun into public place with no issue but a Black man picking up a toy gun in a Walmart gets gunned down by cops. I wanted to write about the value of life and humanity, but felt like it was an act futility.

Tony's Kitchen
Adventures in cooking and eating! Orecchiette with lamb sausage and peas. Pressure Cooker Braised Beef Shanks. Flaky cod fish wrapped in salty, rich pancetta and roasted in the oven sounds like a pretty winning dish on many accounts. Fish is healthy. Pancetta is tasty and crispy. Clean up would be a snap. This version was pretty good but was a bit overcooked and the pancetta was not as crispy as I would've liked. I blame it on the pancetta that was a bit too thick. I guess you. I know what you're thinkin...
