Spiced Bacon and Lentil Soup. 1 tablespoon vegetable oil. 1 large onion, chopped. 8 rashers smoked bacon (or equivalent 'cooking bacon'), chopped. 450g potatoes, cut into chunks. 2 garlic cloves, crushed. 1 teaspoon ground cumin. 17 litres fresh vegetable stock, hot. 300g dried red or brown lentils. Handful chopped fresh coriander (or for color and nutrition, a handful of chopped spinach leaves). Living in the UK.

Thai Peanut Chicken with Coconut Milk. 1 cup cooked, shredded chicken*. 2 tablespoons butter or peanut oil. 1-2 shallots or one small onion. 1 green or red chili or 1/2 teaspoon cayenne pepper. 1 carrot, shredded. 1-2 tablespoons lemon or lime juice. 1-2 tablespoons soy sauce. 2 tablespoons curry powder. 2 teaspoons ground ginger. 1 tablespoon sesame oil. 1 can coconut milk. 1/4 cup peanut butter. This dish makes a great meal on a warm, summer evening. 280ml (10 fl oz) chicken or vegetable stock. 175g (6 oz) uncooked couscous. 3 tablespoons extra-virgin olive oil. 2 tablespoons fresh lime juice. 1 teaspoon red wine vinegar. 1/2 teaspoon ground cumin. 8 green (spring) onions, chopped. 1 red pepper, seeded and chopped. Small bunch fresh coriander (cilantro), chopped.
