Insights, quips, and queries on the vegan way of life. Sunday, February 10, 2013. Nemo Roasted Veggies with Pesto over Spinach Spaghetti. We live in Southern Maine so of course we've spent the majority of the last two days homebound, shoveling, taking snowy walks to the Speckled Ax. For soy lattes and the Works Bakery. For a bagel with Tofutti. Did not take into account the impending storm. Nonetheless, we ended up with a cozy, quite satisfying meal! Nemo Roasted Veggies with Pesto over Spinach Spaghetti.

But on the weekends, I really enjoy sitting down with a good book, a cup of coffee, and a nice breakfast that I can eat with a utensil! 1/2 to 3/4 cup of brown rice luke warm or cold (I used leftovers and microwaved them for 30 seconds). 5 cherry tomatoes, halved.

Vegan Fashions | The Vegan Explorer
http://theveganexplorer.blogspot.com/2011/04/vegan-fashions.html
Insights, quips, and queries on the vegan way of life. Sunday, April 24, 2011. Last night I visited the Walking Company. To check out their Danskos. And they have a wonderful wall of 100% vegan Dankso. S I already own a pair of Danskos that are leather. And although I feel like a big hypocrite, I do still wear them. They're super comfortable and will hold up for years, I'm told. Which is a plus when they come with a $120 price-tag. I purchased a pair of the Sissy style. Though and found the Veda style.

Insights, quips, and queries on the vegan way of life. Saturday, April 9, 2011. Since last Friday, my fiance and I have been battling an awful viral infection. I'm talking coughing, sneezing, runny noses, ear infections - the works. It has not been pleasant. In that time, though, we have adopted a new kitty - the one year old, short hair domestic "Bob," and have cooked our way through a few new and wonderful meals. Meet Bob the Cat. Taste - the pie has wonderful flavors, though I'd add a bit more spice (...

Insights, quips, and queries on the vegan way of life. Tuesday, March 19, 2013. Butternut Squash Curry Soba Dinner. On Sunday, J and I went out for a drive and ended up in Scarborough. We'd always known Lois' Natural Marketplace. Was there, but for some reason we hardly ever go. It's in an area we don't frequent and so it's easy to forget - but boy, we won't forget it now! We walked away with a large bag of Little Lad's Cashew and Date Granola. A small bag of Ener-G's gluten free sesame pretzels. Preheat...

Seaweed Salad and Marinated Tofu | The Vegan Explorer
http://theveganexplorer.blogspot.com/2012/02/seaweed-salad-and-marinated-tofu.html
Insights, quips, and queries on the vegan way of life. Wednesday, February 15, 2012. Seaweed Salad and Marinated Tofu. A few nights ago, J made a delicious seaweed. Salad using local frozen seaweed found at Whole Foods. We've been meaning to try the stuff ever since the company, Ocean Approved. J also made marinated tofu, which complimented the salad nicely - the contrast of the soft, uncooked tofu against the somewhat tough and tangy seaweed was a really nice paring. Sushi Night | The Vegan Explorer
http://theveganexplorer.blogspot.com/2013/02/sushi-night.html
Insights, quips, and queries on the vegan way of life. Sunday, February 24, 2013. Although it's time consuming, J and I love making sushi together. It's a great meal to make with someone and there are so many combinations to try - it never gets old! First, I started by making the rice (while J was kindly shoveling) because it needs to cool before you can handle it. I used Alton Brown's sushi rice recipe. Then J took over and started the assembly process! From This Rawsome Vegan Life. We made the table up...
