Thursday, June 30, 2011. I picked up a couple of beautiful zucchini on my way home from the beach. I love zucchini in a variety of forms, but my favorite, hands down, is zucchini bread. Tuesday, December 27, 2011. Christmas is one of my favorite holidays, and this year was wonderful. I had to cram four family celebrations into two days, across the state of Maryland, but it was well worth it. I got to spend those two days with some of my favorite people on Earth. This year, I made cookies for several holiday functions as well as gifts for numerous family, friends, and co-workers. Tuesday, August 30, 2011. If the saying "you are what you eat" is true, I'd be a chickpea. With a smear of peanut butter for my hair. I add chickpeas to everything possible. When I found this recipe on the Peas and Thank You website. I knew I had to make them! The chickpeas achieved more of a chewy texture than crunchy, but I still devoured them. And my local Whole Foods finally. Carries Daiya Pepperjack shreds. NOMNOMNOM! Super simple and tasty, these are great for busy week nights! It should look like.

Sunday, November 27, 2011. A co-worker of mine, who shares my love of all things pumpkin, brought in a recipe for a sweet bread. The recipe she brought in wasn't vegan, but she said she thought maybe I could veganize it. Once I looked at it, I, too, thought that veganizing it would be easy. And it was! 1/2 C canola oil. 1 1/4 C sugar. 1 tsp vanilla extract. 1 1/2 C all-purpose flour. 1/2 C whole wheat flour. 1/4 tsp baking powder. 1 tsp baking soda. 1/2 tsp ground ginger. 1 Preheat oven to 350 degrees.
