Donated some mini-cupcakes on behalf of Sugar Beat Sweets. Enough to cover an 11 x 17 cookie sheet). 1/2 c confectioner's sugar. 1 1/2 tsp. cornstarch. 1 tsp lemon juice. 2-3 tsp. soy milk. Sift the sugar and cornstarch together. Stir in the lemon juice and any food coloring you wish to use. Add the soy milk, 1 tsp. at a time, until the mixture becomes a smooth, but thick, paste. Warm sun means my CSA box has been overloaded with cucumbers and melons. Here's a refreshing way to use up the best summer flavors in one tasty drink. Cucumber melon coolers (4-6 servings). 1 medium cucumber, roughly chopped (about 2 c.). 1 small melon, roughly chopped (about 3 c. - I used a sharlyn melon). 1/4 - 1/2 c. unrefined cane sugar. 1 handful of mint leaves. Zest and juice of 1 lime. Perfect for sipping by the pool, on a porch, or if you live somewhere awesome like the East Bay, at the beach!

Caramelized lemongrass tofu with vermicelli. Vietnamese bun thit nuong. Is a cold noodle salad dish, traditionally served with pork and a dressing made from fish sauce. This is a much improved version that doesn't require any killing. 1 - 16oz package super firm tofu. 1/4 c unrefined cane sugar. 1/4 c 2 tbs. water. 2 tbs soy sauce. 2 tbs canola oil. 1 tbs rice wine vinegar. 1 tbs ginger, grated. 1/4 c lemongrass, chopped (about 4" of stem). 1/2 tsp. sriracha. 1 green onion, chopped. 4 oz rice noodles.

I have a huge amount of Israeli couscous, because I really like the stuff and I forgot I already had a huge bag so I bought another huge bag when I went to the coop last week. GUESS WHAT THAT MEANS!
