Here’s a little gem in southern Spain, the bar in the Hotel Bahia on the outskirts of Algeciras just across from Gibraltar. It’s right on the beach, it’s open all year round and it’s a great little place for pre-lunch beers and tapas. Green bean and courgette soup. Serrano ham breakfast toast. With green asparagus and spring onions. Chicken k'dra with chickpeas. Honey and chilli steak salad. Or boquerones en vinagre. Sea bass with rosemary and lime. Swordfish with fresh herb and garlic sauce. Clams with green peppers, tomatoes and wine.

In this recipe, the cucumber is replaced by cantaloupe melon to give a slightly sweeter finish. Well, factory is perhaps the wrong word. A mineral water bottling plant. It's close to Chaouen in the Rif mountains of northern Morocco.
