Tuesday, January 1, 2013. 1 3/4 cup flour (I like unbleached all-purpose flour). 1/2 cup Sugar ( I use Florida Crystals and I think they are sweeter, so you might want a little extra sugar if using a different brand). 1 tsp baking soda. 1 tsp baking powder. 1 cup of coconut milk ( I used So Delicious Unsweetened coconut milk). 1/2 cup coconut oil. 1/2 - 3/4 cup shredded coconut. 2 tsp vanilla extract. 1 tbs apple cider vinegar. Sweetened condensed milk (use the recipe tagged above). 1 cup powdered sugar.

Monday, December 31, 2012. Rainbow Cashew Stir Fry. I love stir fry! So much in fact I make it all the time. This is one of my favorites. The cashews make it awesome and trust me when I say that you won't miss the meat. This is kind of my take on my favorite Thai Restraunt's Cashew Nut. It's not as good as Sala, but it's pretty darn good. Tuesday, July 15, 2014. I spent the last week cooking for 150 people. I should clarify, I was one of three cooks. I was excited that 4 of us were vegan/vegetarian. But since I spent 16-20 hours a day in the kitchen while at girls camp, I haven't had a chance to blog since returning. I have been spending most of my time sleeping (imagine that). Here is what you need:. A handful of spinach, chopped. 2 mushrooms, sliced. 1 Roma tomato, chopped. 1/8 cup diced red onion. 3-4 pieces of tofu bacon.
