It's not only a quick, easily, healthy dinner choice, but it's also unbelievably delicious :D. 2 tbsp. olive oil. 1 large onion, chopped. 5 cloves garlic, minced. 6 dried chilies, finely chopped. 4 medium carrots, quartered and sliced. 3 cans kidney beans. 3 cans diced tomatoes. 1 can sliced mushrooms. 1 tbsp. honey. 1 handful fresh basil, chopped. Salt and pepper, to taste. Green Eggs and Bacon.

Sunday, June 10, 2012. Wholegrain Veggie Dream Pizza. Friday night has been dubbed Pizza night at our house, so this was my contribution for the evening :D. For the Dough - enough for three 30 cm pizzas. 5 dl lukewarm water. 1 tbsp dry yeast/ 50g yeast. 4 dl wholemeal rye flour. 3 dl barley flour. 6 dl all-purpose flour. Pasta flour to cover the pizza stone. Whisk the yeast with the water in a large mixing bowl. Add the salt. Gradually add the flour, kneading the dough, until you have a firm dough.

Tuesday, May 29, 2012. These crisps are perfect for a snack or a light meal with cheese or cold cuts. Store them in an air-tight container to maintain their crispness. 5 dl cold water. 2 dl all-purpose flour. 1 dl flax seeds. 1 dl sesame seeds. 1 dl pumpkin seeds. 1 dl sunflower seeds. 15 tsp. salt. Preheat a oven to 170ºC. Combine all ingredients in a mixing bowl. The mixture should be liquidy. Let the mixture set for about 10 minutes. Distribute the mixture onto two oven trays with parchment paper.

Monday, June 4, 2012. This is the recipe I make most often and is my go-to recipe when I have a brief lapse of dinner ideas. As a matter of fact, Benjamin made this on our first date, and it's been my favorite ever since :). I love the hotness of the chili combined with well-rounded creamy coconut milk completed by the hint of sweetness from the mango chutney. Vary the recipe by switching up the vegetables and maybe adding freshly squeezed lime juice. 600g chicken breast, cut into bite size pieces.
