Cheers to The Good Life. Wednesday, August 12, 2009. Tomato Basil Bruschetta with Crumbled Feta Cheese and Balsamic Vinegar Syrup. I recently got a basil plant, it's my new pet. And every day since I got this basil plant, I've been having a lot of basil based dishes; bruschetta is a perfect addition to this menu. Really, there's no substitute for fresh ingredients. Tomato Basil Bruschetta with Crumbled Feta Cheese and Balsamic Syrup. Some plum tomatos, cut in half and seeds removed. Some garlic, chopped.

So good I forgot to take a photo! 2 cans solid white albacore tuna. 2 hard boiled eggs, yolks discarded, egg whites chopped. Quarter of an onion. Salt and pepper to taste. Mix all ingredients in a bowl and serve chilled. BLACK BEANS with WILD RICE. 1 cup wild rice, boiled and then simmered in two cups water with a dash of dried oregano for 1 hour.
