I made these as a quick bite to go with a cup of tea round at a friends house and they were very moreish. We thought they were a bit like mince pies but without the mincemeat! Do try them as they are very quick to whip up and taste yum! From The Hairy Bikers Big Book of Baking. 200g soft light brown sugar. 1 tsp ground cinnamon. 1/2 tsp ground mixed spice.

The brief was chocolate cupcakes with funky bright icing on them as she's 'slightly out there'! These looked really cool when they were done, the icing was a bright green and hot pink. I have had one of those giant cupcake silicone moulds for a while now yet have never gotten round to trying it. Well this weekend was the weekend for it.OH's family were visiting us from the States and were here from Friday until Monday and as it was Lucy's (youngest niece) birthday on Wednesday, I decided I was going to make her the giant cupcake as a surprise cake. So all in all, it was a success!

I feel I have to point out, Tom is 25! He loves the Gruffalo.ahhh! I finally got my email last Friday telling me the venue of the Clandestine Cake Club (its all very secret! I spooked it up a bit with the addition of a glitter bat and some fondant pumpkins and scatted some bats and ghosts around the cake.
