Olive oil (a tablespoon or so). 2 shallots, thinly sliced. 3/4 lb. Brussels sprouts, trimmed, cored, and shredded. Balsamic vinegar, to taste. Coarse salt, to taste. Freshly ground black pepper, to taste. This tasted fine, but it was so. Worth the tremendous effort of coring and shredding all those darned Brussels sprouts.

I can't think of any reason I would go back to plain old mashed potatoes after having this. It's just so far superior in flavor- and much healthier, too! One celery root (a.k.a. celeriac), peeled and cut into 1/2-inch dice. 12 ounces (about 2 1/2 c.) potatoes, peeled and cut into 1 1/2-inch pieces. Coarse salt, to taste.

Tuesday, December 19, 2006. We've found a space! I have great news. We've found and confirmed a space that we can meet in and grow into! I met today with the VP of the Association for Individual Development. And they agreed that we could use their building here in Yorkville on Sunday mornings. It is the perfect type of space for us. It already has a "living room" feel and there are several side rooms for children. There is a full kitchen, a foyer, even an outdoor deck! This is a cause for celebration!
