Where would I be without this refreshing, chilled soup from Spain? A cooling lunch for a hot summers day and an excellent way for me to use up the remains of last years tomato crop that is still in the freezer. I’m going to experiment with the next batch of Gazpacho by mixing some tomatillos with the tomatoes. I think they will add a nice zing as they have a slightly tart, fruity flavour. The garnishes are all served separately so that everybody can make their own soup according to individual tastes.

Hot and Spicy Chicken Wings. I discovered this recipe quite by accident when I was looking for a decent pizza base. It claims to be a Domino’s copy cat recipe for their hot and spicy wings. Having never eaten the original wings from Domino’s I can’t vouch for how authentic it is but what I can say is that these wings are delicious, easy to make and economical.
