Tuesday, January 29, 2013. Day 100- Ice Fishing and News. The weather has warmed considerably. Nights are still cold, in the -30°C range, but the days are barely hitting -10°C now. Of course that shift in temperature brings fresh snow, and freezing rain. Niece1 and Niece2 took the Littles, the kids and Sally back to 'school' when the weather broke, while Husband, Brother, Dad, Diego and the Bigs went ice fishing. It didn't go well. Chatting with others in the area they learn that there is mail in town!

Sunday, August 11, 2013. It takes several more days of butchering and delivering beef before we are done 'paying' for our hay. It's all been carted back to our place though, so we should be set until spring. We met people with all sorts of poultry. I manage to make several trades, and have increased my flock to 30 chickens, 7 turkeys, and 10 ducks. 10 of the chickens are banties, so I have hope they'll hatch eggs for me in the spring. Friday, August 21, 2015. I simmered a bunch of roasts in a large stock pot for about 6 hours. 1/2 tsp pickling salt per jar. Chopped roast beef into small chunks and filled jars. Covered with beef broth and/or hot water. Processed 75 minutes for pints, 90 minutes for quarts. I started with three frozen chickens and let them simmer in a large stock pot for about 5 hours. 1/4 tsp pickling salt per pint. 1/2 tsp pickling salt per quart. I broke them up, removed the bones, and cut the meat into small chunks.
