Thursday, November 20, 2008. Cinnamon Tea - Ice or Hot. Drank Cinnamon tea in Korea at a restuarant that Jenny brought me and it was very nice and refreshing. Here's my own version. 3 English Tea (in bags). Boil a pot of water. I like my tea weak, so I usually dip the tea bags for 5 to 10 seconds or so only. Stir if tea is not well mixed. Drop in a few sticks of cinnamon (according to your own taste). Turn off the fire. Put in rock sugar and stir till it dissolves. Set aside to cool.

Mashed and rolled into a ball and press into a 'button' shape which the Hakka calls 'suan pan zi' for the shape represents the Chinese abacus counters. A an average size Yam about 500g (Thailand's Yam is best) . Should serve about 8 person. E vegetable, can be kai lan, bean sprout, carrots. 2 cut into cubes for steaming. 3 steam the yam until soft for mashing.
