Monday, February 27, 2012. I LOVE this salad and it's full of lycopenes and other wonderful antioxidants, not to mention MUFA's(a good fat! This salad also has a low glycemic index, so long as you don't drink the dressing! Recipe for 1 serving:. 2 oz or so of mozzarella cheese. 2 or 3 tbsp of Cheesy Fantastico (I use the light version=25 calories). Chop up tomato and avocado. Slice cheese. So something that I would like all of us to do is make a goal to do our best for preventative health care by being conscious of what we eat! So here are a few things:. 1 We have food labels for a reason people. Read them. 5 Fast food restaurant portion sizes are much more than you think! So, those are the big points for now. Love you all!

Saturday, January 12, 2013. GINGER SNAP COOKIES (Grandma Marge Gilson via Mom Leslie Peterson). I LOVE this cookie recipe. Mom makes these often, and they are to die for! 1 and 1/2 Cups Shortening. 2 cups white sugar. 4 cups sifted flour (sifted). Use just a big spoon to mix instead of a whip. When mixing in the dry ingredients. just fold dough with the back of the spoon! Mix the first 4 ingredients until smooth and creamy,. Dough will be soft yet not sticky,. Roll dough into balls (1 and 1/2 inch-ish),.

Tuesday, January 17, 2012. 190; cup butter, softened. 4 oz cream cheese. 1 ½ cups sugar. 190; tsp. vanilla extract. 1 ½ cups flour (Kimberly's flour recipe works GREAT too! 189; cup flaked coconut. Powdered sugar and additional coconut, optional). In a large bowl, cream the butter, cream cheese and sugar till light and fluffy, about 5 min. Add eggs, one at a time, beating well after each addition. Beat in flour just until combined; fold in coconut. Pour batter into prepared pan.

Tuesday, May 8, 2012. Brazilian Rolls Recipe (Gluten Free). 1/3 C olive oil. Scant 1 1/2 C tapioca flour (or tapioca starch). 1/2 C packed grated cheese. Preheat oven to 400* Grease mini muffin pans. Put all ingredients into blender. Blend well. Can refrigerate at this point up to one week. Pour batter into greased muffin pans. Bake 15-20 minutes or until puffed and lightly brown. Let cool on rack. Serve warm or at room temp. Makes about 16 rolls! Grandma Gilson's Pudding and Icecream. 1 T Cocoa Powder.
