On July 8, 2012. 6 medium sized eggplants. 2 large onions, cut into thin length-wise slices. 3-4 cloves of garlic. 3 large tomatoes, peeled and chopped. 2 bell peppers, chopped. Remove the stems of the eggplants and brown them in olive oil on each side for a few minutes, until slightly softened. Set aside and let cool. I made this dish on Saturday for Alec’s birthday, also with a bunch of other traditional Southern fare. This chicken was the crowning jewel of the table, and we all sat silently as we devoured the chicken. Despite the labor and the mind-bogglingly I used a liter or oil, it was all worth it. I believe that the first Friday of every month should be Fried Chicken Fridays. 1 liter of oil.
