Saturday, 27 September 2014. If you are going to have some form of lemon cake, make it taste like lemon! This one pulls no punched with a triple hit of lemon. 200g butter or margarine. Zest and juice of one lemon. 2 large tablespoons curd. 200g self raising flour (I used Dove's gluten free flour). 3 tbsp caster sugar. Juice of one lemon. Icing sugar to decorate. 1 - Preheat the oven to 180C/GM4. Grease a large loaf tin. 4 - Sieve in the flour and gently fold until well combined. View my complete profile.

This challenge entailed trying to make one of my favourite ever cakes without it having a dry, sandy texture, which baking with rice flour based gluten free flour can often do. I've cooked this cake many time before and I'm heavily indebted to Nigel Slater from Kitchen Diaries, a recipe I've tweaked once or twice but not to this extent. The kind people at Hillfarm Rapeseed Oil. 2 tsp coffee granules.
