My friend who lives in Beijing treated me to a Beijing specialty - Chao-Gan and Bao Zhi. This old restaurant next to the Drum Tower specializes in dishes made from innards. Definitely a local’s kind of place, grease spot, packed with a line to the door, people sharing tables. Behind the counter, there is a lady chopping away at the innards for the next order. The Chao-Gan: a cow liver soup, with very thick stock and loads of garlic and Bao Zhi, minced meat bun is a traditional breakfast combination.
