Today in class we learned how to prepare a Black bean, sweet peas and corn risotto which was delicious. The secret to a good risotto is to never leave the oven and keep stirring. Also adding warm chicken stock slowly is important. Then me made soft polenta with carrots, rosemary and garlic. It was amazing, and so easy! And the color was beautiful.
