Monday, March 12, 2012. 4 frozen, uncooked chicken breasts (about 2 pounds). 2 10oz cans mild green enchilada sauce. 2 105oz cans cream of mushroom soup. 8 oz cream cheese. 1 tsp onion powder. 1/2 tsp. ground black pepper. 1/2 tsp. creole seasoning. 1/8 tsp. cayenne pepper. 6 cups cooked rice. Place all ingredients except the cooked rice in a crockpot and cook on low 4-6 hours or on high 2-3 hours. Stir with 2 forks to shred chicken. Serve over warm cooked rice. 1 c packed brown sugar.

Friday, January 21, 2011. 2 pounds potatoes (about 7 medium russet potatoes). 188; cup butter. 188; teaspoon black pepper. 188; cup flour. 2 ½ cups milk. 1 ½ cups chicken broth (or 1 ½ cups water and 2 teaspoons bouillon). 2 tablespoons finely diced onion (or 1 teaspoon onion powder). From The Black Rock. Saturday, April 9, 2011. 1 c packed brown sugar. 1 1/4 tsp baking soda. 2 Tbsp lemon juice. 2/3 c cocoa powder. Preheat oven to 350F. Spoon by tablespoons onto well greased baking sheet. Give them plenty of room because they will nearly double in size. Bake for 11 minutes. They should spring back when touched lightly. Allow to cool completely before filling. 2 c granulated sugar. 1/2 c light corn syrup. 2 egg whites (4tsp egg white powder and 1/4 c water). 1 tsp vanilla (optional).

Mix 1 c flour, sugar, baking soda, baking powder, and salt in a standing mixer with paddle attachment. Add wet ingredients and beat until smooth. April Snow.it's what Utah does. Yesterday Wesley wore shorts to school. I approved. It was 73 degrees when he left. Then this happened. And it kept happening until we had 10 inches of snow in our yard. I know because I measured. It seemed important to be accurate when complaining about the amount of snow in April. My kids could NOT wait to get outside to play. Wesley played snow-ball. Extra points if it stays together long enough to come back out of the hoop. Even Penelope was in love.

Halloween at Thanksgiving Point. We took our kids to the farm at Thanksgiving Point because we heard they had turned it into OZ. And of course, the first thing our children wanted to do was ride the horses. As did apparently every other child there.
