Thursday, July 19, 2012. Once apon a time, we went on a cruise. Our trip started in Puerto Rico where we toured Old San Juan. We loved just walking around enjoying the warmth and the culture. We were able to eat some delish Puerto Rican food while we were there which was amazing! Then it was time to board the ship! Ours is the one on the right) It was so much bigger than I even imagined and it kind of freaked me out that it could actually float! Britni, Mel, me, Amy, Taryn. We loved our cute server!

Saturday, January 19, 2013. 1 tablespoon olive oil. 1 1/2 cups panko breadcrumbs. 1/2 teaspoon Italian seasoning. 1/2 cup grated Parmesan cheese, plus extra for serving. 1/2 cup all-purpose flour. 1 1/2 teaspoon garlic powder. 3 large egg whites. 2 large boneless, skinless chicken breasts, butterflied and cut into halves (4 pieces total). 2 cups marinara sauce, warmed (or use tomato sauce recipe below). 1/2 cup shredded mozzarella cheese. 1 tablespoon minced fresh basil. 1 (28-ounce) can diced tomatoes.

Monday, January 14, 2013. 1 tablespoon extra-virgin olive oil. 2 garlic cloves, finely minced. 2 (14-ounces each) cans diced tomatoes. 1 teaspoon dried oregano. 1 teaspoon dried basil. 1/4 teaspoon black pepper. 1 pound penne pasta or other tube-shaped pasta. 8 ounces mozzarella cheese, cut into small cubes. 2/3 cup shredded Parmesan cheese. Monday, January 14, 2013. Whole Wheat Blender Pancakes. 1 cup wheat berries/kernels. 1 tablespoon baking powder. 5 tablespoons butter, melted. Combine the wheat berries/kernels and the buttermilk in a blender and blend on high for 3 minutes, until the mixture is smooth and thick. Add the 1/2 cup milk and continue to blend for 2 minutes. Add the remaining ingredients and blend until the batter is smooth. Cook the batter on a hot griddle for pancakes or in a waffle iron for, well, waffles!

I got them at Sam's Club. They are hawaiian-style chicken meatballs. Only 20 minutes to dinner! Here's what you do:. Start rice in rice cooker/ on stove, adding amount of veggies as desired. Place desired amount of meatballs in a shallow pan. Pour 1/2 cup water/chicken stock/pineapple juice. 2 T brown sugar.

This time I used the sad, wilted greens from the back of the drawer, and the bland, remainders of a few frozen veggie bags. Also, I made it creamy for a change.
