Monday, September 21, 2009. Yesterday was Eggplant Pasta day! So far, this was the only recipe I was nervous to make because I have never worked with nor made anything using eggplant. My sister-in-law was the first to introduce me to this delicious vegetable, so who better to be our guests of honor than her, my brother and my nephew!
