The weather is gorgeous, people are smiling,and everybody is rushing outside to the beaches and the parks. I love Barcelona! Lentil and Split Pea Soup with a bit of Easter Ham. 1 small onion, chopped. 3/4 cup green lentils. 3/4 cup split peas. 1/2 cup basmati rice. 8 cups broth (I use vegetable due to Thomas’ allergy, but beef or chicken will have more flavor). 4-6 cups of water – wait to add as needed.
