Tuesday, September 7, 2010. Another Use for Zucchini. Instead of buying an expensive package of gluten free pasta, break out your mandoline to slice zucchini into spaghetti strips, fettucine style. Then serve it raw or lightly steam it in some flavored water or broth. I used some garlic powder and vegetable broth. I gently cooked it on low for a few minutes. Removed and top with cashew cheese and raw tomato sauce. 3 ripe tomatoes quartered. 1 tsp garlic powder. Blend all and top on top of zucchinetti!
