Olive oil or cooking spray, for baking sheets. 1/2 cup plain dry breadcrumbs. 1/2 cup finely grated Parmesan. 1 teaspoon dried oregano. 1/2 teaspoon dried basil. Coarse salt and ground pepper. 1 large eggplants, sliced into 1/2-inch rounds. Fresh sliced shredded mozzarella. Thursday, November 8, 2012. 1 bunch (about 6 ounces) kale.

Thursday, October 25, 2012. I LOVE butternut squash. It is probably my favorite of the fall squashes. So when I found a recipe for butternut squash gnocchi, I knew I needed to try it! I was a little disappointed after making it, that you loose a lot of the squash's flavor, but it was still delicious with a kale salad on the side. Next time, I may try to make butternut squash ravioli to try and maintain the sweetness. 1 large butternut squash (about 2.5-3 lbs). 1 egg, slightly beaten.

Thursday, November 8, 2012. Dark Chocolate Banana Ice Cream. Here is the perfect sweet snack without the guilt. Make this with leftover bananas from the bunch on the counter (before they go bad.) It's a great way to minimize the amount of waste each week. 1 1/2 peeled medium bananas, sliced into coins and frozen until solid. 3 tablespoons unsweetened cocoa powder. 1/2 teaspoon vanilla extract. Makes me wish we had endless summers. July 4, 2013 at 8:59 AM. Well, that is easy! Would be great for the farm.

Saturday, September 29, 2012. Homemade Buttermilk Ranch Dressing Recipe. 1 teaspoon lemon juice. 1/4 teaspoon mustard powder. 1/8 teaspoon black pepper. 1 Tbsp chopped fresh parsley. 1 teaspoon chopped fresh chives. 1/4 teaspoon of dry dill (or a teaspoon chopped fresh). In a medium bowl, stir together the buttermilk and mayonnaise until fully mixed. Add in the other ingredients, adjusting for taste. Keeps for a week, covered in the fridge. Makes about 1 1/2 cups. 3 boneless- skinless chicken breasts.
